Quinoa salad with tomato, onion, and spinach.
I also made a vinaigrette because quinoa can be incredibly bland. I usually make very little every time instead of making a lot and refrigerating it because I like mixing it up! Make sure you use equal parts vinegar (I used balsamic) and olive oil. Then you can add pretty much anything to it (raspberry jam, mustard, lemon juice, etc). This time I used maple syrup and spicy brown mustard and a little bit of oregano and it was really good!
